Let's talk briefly about the process of creating tea. After harvesting, the tea is first withered and then the leaves are broken up by shaking or light rolling so that the substances they contain react with the air (oxidize). This process is called fermentation. The longer the tea ferments, the darker it becomes.
In the case of green tea, this step is avoided as much as possible and the leaves are directly high-heated to dry after the withering process. The same process is used for our specialty, green rooibos. This is also dried directly after harvesting, so that the ingredients have no time to react at all.
The result is a wonderfully mild, soft and light tea that is still unmistakably reminiscent of rooibos. If you enjoy drinking regular rooibos tea, you must give green rooibos a try.
